The All American Pressure Canner – A Perfect Tool For Home Canning and Self Sufficiency

"Of Course I CAN!"

With the turmoil in the news and ever growing list of concerns about our food supply, the ability to produce your own food and safely store it looks more and more appealing. Back when I was a kid, everyone in my family grew a garden and put up a major part of their crop through canning. Pantries were filled from floor to ceiling with Mason jars and the shelves of the storm cellars were lined with canned peaches, tomatoes, beans and anything else they could grow or gather. I still remember how good the Freestone peaches my Nanny put up would taste (especially with some homemade vanilla ice cream!).

With a big enough pot and some basic equipment, just about anyone is able to can basic vegetables at home. But if you want to expand your home canning possibilities, you need to step up to a pressure canner. According to the U.S.D.A., there is no safer way to can vegetables at home than with a pressure canner. And pressure canning is the only safe way to can meat, fish and poultry. Jackie Clay, the guru of home canning at Backwoods Home Magazine even uses her pressure canner to can milk and cheese (although that’s an extreme example of what you can accomplish with a wealth of experience and a good pressure canner.)

For my money, you can’t get better than the All American line of pressure cookers and canners.

Made in the USA

That’s right. The All American Pressure Cookers and Canners are made in the U.S.A! Let me say that again, in a time of rampant globalization and the industrial base of the United States being eroded from both within and outside our borders, there is a company that is dedicated to still making a quality product right here in the States. All American Pressure Cookers and Canners are built at the Wisconsin Aluminum Foundry which has been producing quality items since 1909.

Built to Last

All American doesn’t publicize the fact that they produce heirloom quality products. But if you talk to enough people, you will hear plenty of stories about people that are still using All American Pressure Canners that have been passed down from family member to family member. The All American 921 Pressure Cooker/Canner weighs in at a hefty 20 pounds of aluminum. If you think about how little a normal aluminum pot weighs, you will realize just how sturdily built a 20 pound pressure canner must be. The Pressure Cooker/Canner is also constructed with double thickness edges along all of the most common wear points.

A Pair of Vintage and a New All American Pressure Canners (There's a lot of life left in that older canner!

Built for Safety

Each All American 921 Pressure Cooker/Canner comes equipped with a geared pressure gauge that is graduated for 5 psi, 10 psi and 15 psi. Too keep you from hurting yourself from building up too much pressure, the All American Pressure Canner comes with two venting safety features: an automatic overpressure release on the pressure gauge and a overpressure plug. The top handle is constructed of heat resistant bakelite handle for your safety.

Built for Ease

Traditional pressure canners require a gasket properly seal the canner. If you’ve ever had to deal with these gaskets, you know that it takes some trial and error to get the gasket placed correctly. Gaskets also have to be replaced from time to time (often when you need it the most).

The All American 921 Pressure Cooker/Canner doesn’t use gaskets. Let’s let that sink in for a second. With the All American pressure canner, you never have to buy another gasket. You never have to fuss with another gasket and you never have to worry about having your last gasket fail when you’ve got bushels and bushels of fresh peaches that need to be canned.

As far as I know, All American is the only company to offer pressure canners that utilize a Metal-to-Metal sealing system. Their casting and finishing is so precise, that a perfect seal is created between the pot and the lid without a gasket. The precision craftsmanship with the sturdy positive action clamping system creates a solid seal (Some people swear by a thin coating of olive oil along the rim before sealing it.) And since the All American 921 is gasket-less, you won’t ever have the frustration and of trying to get a stuck cover off of your canner.

The smooth satin finish along with the Aluminum construction also makes clean up a breeze.

Well Built for Ease of Use and Clean-Up

Big Enough, But Not Too Big

Weighing in at 20 pounds, there is no doubt that the All American 921 is a big piece of equipment. That size though provides you with a sturdy, even heating piece of equipment.

Here are the specs:

Overall Length – 15 inches
Overall Height – 16 inches
Inside diameter – 12 5/8 inches
Inside Height – 10 1/2 inches
Capacity – 21 1/2 Quarts (Liquid), or 19 Pint Jars, or 7 Quart Jars ( Remember that jar sizes sometimes vary, so your mileage may vary!)

With it’s height and size, it’s one of the few pressure canners and pressure cookers that can handle Quart Jars. But because of that height, be sure that you have enough room between your stove top and anything above your stove to accommodate the 16 inch overall height.

I’ve focused a lot on the All American 921 Pressure Cooker/Canner as a canner. But let’s not overlook the ability to use it as a robust pressure cooker. All of the great features that make it perfect for canning, make it perfect as a pressure cooker. In fact, I would imagine that a lot of people get a lot more day to day use out of the All American 921 for cooking meals than they spend time canning. Either way, the All American 921 is a versatile tool for anyone interested in taking control of their food source for either health or for self sufficiency.
